Robert Schultz, an American composer, writes in a challenging, individualistic but accessible style for pianists, beginners to advanced.  He's also written a highly respected teaching method.  And he's transcribed many works for piano.  I highly recommend his works, especially the transcriptions.  Here's a link to his website:

There are many works from after 2000 on this site and the scores are freely available. Andreas Pieper's 3rd Sonata looks like a significant challenge. Andrew Ladd and Johannes Rövenstrunck have also written many nice pieces.

Hamelin Etudes, Paganini Variations, etc.? But, since there are very few pianists out there who can actually play these pieces effectively, I would suggest another good composer to look at: Dianne Rahbee. Her pieces especially good as beginner- to moderate- level repertoire (look at miniatures and preludes), as well as some more advanced pieces (Toccatas, Sonatas, Concerti).

Shostakovich Preludes Op. 34
Scriabin Etude Op. 2 No. 1
