You should take a look at some of Beethoven's manuscript corrections, or what he considered a fair copy.

Diligence of proof reading varied by composer. Liszt carefully went through publishers' proofs with a fine-tooth comb. Chopin didn't have much patience for proofing, and it shows, as Chopin editions have so many variances among them. So it depends on the composer.
