How to play fast and even notes ?

Hi everyone,
I have been practising a lot with classical sonata, other music with lots of scales. At the moment, I am practising Chopin minute waltz. Mozart Turkish March. I have playing this piece for over 10 years on and off. Somehow, I just can't get the quaver, or semi- quaver all even and light all the way. Due to tricky fingering , I feel my fingers are running fast and tangle up. or I am too agitated, or each bar accent too much. The worst of it, when I have to play with p or pp. I try to slow practice, but still not sound right. The left hand is always louder than the right hand. How to play even note light , fast and clear without making accent or too agitated. I hope you guys will understand what I mean. It has been bothering me quite sometime now. My fingers are so easily to slip off especially when scales are with lots of flats or sharps. My fingers can't stay firm enough and light. Any suggestion thanks

best thing is to find a good teacher, darl. its hard to give perfect, customized suggestion without seeing you play. tds
