I use Sibelius.  But if you want more complexity and full control, go with Finale.

More like: I use Sibelius. But if you want an overly complicated program that has a less intuitive interface and takes a lot of time to do a simple thing which is much more easily done with Sibelius, and want less control of the manuscript paper, go with Finale. I have tried both. Finale pales in comparison to Sibelius. It's much easier, stronger, and faster. If you plan on teaching theory, composition, or want to break up scores, you can use this.

I too find Sibelius to be a great program. It's very powerful - the Sorabji Sonata was transcribed digitally with it, but it's also very intuitive. It's got a very low learning curve.
