Oh boy, this is so hard to decide, here's my list:
Bach, WTC book 1 (yep, all 24 preludes and fugues)
Bach, Art of Fugue
Bach, English Suite No. 2
Bach, Inventions and Sinfonias
Beethoven, Waldstein Sonata
Beethoven, Moonlight Sonata
Beethoven, Pathetique
Chopin's Mazurka in A Minor, Op. 7, No. 2
Beethoven, 15 variations and a Fugue
Bach, Goldberg Variations
Of course, this is not in any particular order cause I dwell between these pieces as my favorite according to my mood.

As of now: (also inc.: mood descriptions)

Appassionata mov't 3 - Beethoven (Rage/Fiery passion)
Tr.9 (Ricordanza) - Liszt (Unpredictable/melancholic love stuff)
Clair de Lune - Debussy (Dreaminess/Loneliness)
Concerto in Dm K466, 2nd mov't - Mozart (Charm)
Liebestraume no. 3 - Liszt (Unquenchable love)
Nocturne in Db Major - Chopin (Melancholy)

I'm not sure if this is in order, but the Appassionata and Ricordanza are certainly the tops.  :)

Needless to say, the above lists Beethoven, Chopin, Liszt, Rachmaninoff (etc.) countless times (and with good reason).  I thought others, like me, may be interested in seeing pieces that are less well known, so I made a summary of them.  These are all taken from the previous posts.  This is purely my subjective perspective.

Balakirev - Toccata in C sharp minor
Bortkiewicz - Ballade
Carl Vine - Sonata no.1
Elgar - In Smyrna
John Cale - Monologue 1
Leo Ornstein - Morning in the Woods
Ligeti - L'escalier du diable
Ligeti - Vertige'
Lowell Liebermann - Gargoyles Op. 29
Lyapunov - Rhapsody on Ukrainian Themes
Milhaud - Tijuca
Rialto Ripples Rag by Gershwin
Sibelius - romance in D flat major
Smetana - Etude g sharp minor "On the sea shore"
Vladigerov - Aquarells no.6
Vladigerov - Vardar rhapsody
Yann Tiersen - Comptine d'un autre ete'

I left out mentions of Sorabji, but in hindsight I wish I had included those.

And 1 P.C.:
Gabriel Pierne - Piano Concerto in C minor

Schubert Grazer Fantaisie
The Grazer Fantasie!!!  :)
Glad to see someone else here enjoys this little played work. The only place I see any discussion of it, for the most part, is in the YouTube comments sections for the piece itself. Want to learn it at some point.
