I just started playing piano after more than 10 years doing nothing. I am doing mostly exercises like scales, arpegios, czerny and hanon and only 1 hour a day. But today when finished I was sweating and my wrists were on fire. No pain or anything like that. What problems can happen if you practice too much? When should I just stop?

That's never happened to me before, maybe you should try 45 minutes if that doesn't work try 30 minutes. I practice for 45 minutes per day and it's never done anything to me.
But Jesus looked at them and said "With man this is impossible, but with God ALL things are possible!"<br /><br />~Jesus Matthew 19:26

What problems can happen if you practice too much? When should I just stop?

Nothing to anything can happen... You can spend 3 hours practising without any pain because you were very relaxed and calm during your session; on the contrary you can catch a tendonitis or worse just in 30min practise if you are stressed with a lot of tension.

I was talking once with my physiotherapist (who is specialized in musician pathologies) and she told me that playing an instrument was like any sport.... You need physical warmup and stretching. And she's so right...

As for when to stop i would say as soon as you start to be less concentrated or that you begin to feel any kind of physical (or mental) tiredness. It's essential to have break during your session.
Maybe instead of practising 1 hour, you can do 2x30min. (in the moring and in the evening; or consecutively with 15-20min break... it's up to you).

To sum up, as soon as you feel any kind of bad thing with your body when you're playing you should just stop and play again later.

Playing Hanon will not help you definitely. Playing real music may help you (like Bach). You will be more relaxed then.

I also started playing after doing nothing. I have practising for 2 years scales, arpeggios and mainly Bach (two-part inventions) and I don't have any problems like you.
