Good Harpsichord/Organ Scales? (Gothic/Baroque)

Hey guys,
I've been playing the harpsichord, and I also want to learn some tunes for the organ. However I'm unable to find any sheet music for the music I like, here are some examples of the style I want to practice:
Organ
Harpsichord (at 1 minute 27 seconds)
I've learned other harpsichord tunes, that are renaissance-like. Such as the beginning to Emilie Autumn's Opheliac:
Since it's so difficult to find the proper sheet music I need, I decided to just learn the appropriate scale/s and play my own.
However I don't know what scale/s would deem appropriate for me to learn. I've been looking for baroque/gothic piano scales but I have yet to find any information. Can someone please advise?

You should be able to find heaps of music (free) here:

Baroque/Gothic scales are the same as any other as far as I'm aware, so any scale book should give you what you need.
