Ondine by Debussy

I am beginning to work on "Ondine" by Debussy, and I was wondering how to read the three lines of music. I have never encountered this so I am a bit confused. Thank you so much!

Debussy did write an Ondine on 3 staves.

You only have two hands. Who cares how many staves there are?

You separate your hands according to voices, not hands, otherwise you'll need 5 hands if it's 5 staves!
usually the top and bottom are RH and LH, then the middle stave is your choice.
