Voyagers! television theme

I'm unable to find sheet music for the theme from an eighties television show called Voyagers!. Jerrold Immel appears to have been the main composer for the show, but several others are listed on the Wikipedia page for the show.

How possible is it to create a piano arrangement without the original sheet music and only going by "ear?" I know it's something I wouldn't be able to do yet, but as long as I'm posting, I'd be curious to know if that's a common method of transcribing a score?

As for the Voyagers! theme sheet music, I assume NBC has never released it (if they still even have it in their archives) since attempting various Google searches comes up empty.

I've also searched a couple of the popular sheet music sites for the show name and composers but have found nothing.
