Managing a large program

How should you manage a larger program, say an hour+? Practice parts every other day?

Play pieces you know, mostly. And only add one or few pieces you are learning fresh.

Old pieces=little risk
new pieces=riskaaaay!!

Or do you mean, how do you manage a program that is large and is all new?

Select the most difficult parts, and give them priority when practicing.  Don't try to work through pieces linearly, break them up.  Work on small sections for short periods of time, rather then hacking away until you are exhausted.  When you get tired or your brain is overwhelmed, move to something different. 
Made a Liszt. Need new Handel's for Soler panel & Alkan foil. Will Faure Stein on the way to pick up Mendels' sohn. Josquin get Wolfgangs Schu with Clara. Gone Chopin, I'll be Bach
