Which pieces. . .

. . .refresh you, make you think of sunshine, fast moving water, or just joyful thoughts?
 I'm interested in finding some that are fast moving, somewhat simple, with appealing progressions.

Minute waltz- chopin! its a lovely piece of music and quite fast!

I'm not sure if this fits your other descriptions, but for me sunshine and fast moving water definitely bring to mind Chopin's F major prelude.

Sunshine? Then obviously Chopin Etude op.10 no.8 aptly nicknamed the "sunshine" etude. Fast moving water? Debussy Images book 1-"Reflets Dans l'eau"

For me, it would have to be the A Major Prelude and Fugue from Op. 87. by Shostakovich.

Which minuet waltz are you thinking about? Op. 18, for instance?

I think BWV 937 almost fulfills the descriptions.

Eduardom said MINUTE waltz, not MINUET waltz. "Minute Waltz" is the nickname given to Chopin's Waltz op. 64 no. 1.
