Question about Edited/Non-Edited Recordings

If you have a video that was NOT edited initially, but then you cut an excerpt from it, is that excerpt considered to be edited?

No, it's an excerpt. Edited means you have changed things within the excerpt.

Edited video does not necessarily mean edited sound (or vice versa). Nor is it necessarily a bad thing - any video that uses multiple camera angles, for example, is an edited video and most are improved by it. Most professional sound recordings are edited for balance/reverb etc to overcome flaws in the recording process. Splicing together different "takes" of a piece is an extreme example and some frown upon it.

one more thing: i'm applying for a competition where they require a couple pieces on an UNedited DVD. If I use different takes for each piece in the DVD, but play each piece in its entirety, does that still count as "editing"? All the pieces I play will be on one single DVD.

As long as the individual pieces are unedited, it will be fine.
