Chopin believed (and I personally am with him on this one) that the starting scales should be B and D flat major (I think there was one other I'm forgetting... maybe). They fit under the hands very well, especially B major, and are a good primer for finger crossings, as the longer fingers are right on the black keys, and the crossings are nearly all black to white or white to black.
