Yes, but you forgot the advertising media people (unless you include them with the organisers), the broadcasters, the marketing teams and, above all as always, the lawyers!

As stated above, the people who "win" are those who come out with the most money- not Pacquiao or Mayweather.
I don't follow MMA or boxing anymore, despite having done a little bit of it myself. I got fed up with the fact that it's basically a bunch of guys trying to be tougher than each other (likely because they're compensating for something).

 My heart say Pacquiao, but my mind says Mayweather. The conspiracy theorist within me, however, is pretty convinced that there's gonna be some controversy surrounding this bout, which will basically necessitate a re-match. In light of how much money the event is expected to make, and all.
