How to apply finger-tapping

Hi everyone,
A little while ago I got acquinted with the finger-tapping method that Glenn Gould used to practice piano. However, I looked up as much as possible on the internet, I still do not understand when or how to use it. So let's say I have a nice little Allemande from the French Suite No. 3 in B minor by Bach. Then how do I apply it. Do I already use it when practicing only the notes?
I'd like to hear from you all very much!
