What I really meant is: What is the chord with the 1st, 3rd, 5th, and 7th notes of scale called?

It's a 7th chord.  If it was Bb it'd be a dominant 7th chord.

Specifically, a major seventh.
In the key of C, the sevenths break down like this;

Major seventh (notated as Cmaj7 or C+7): C E G B
Dominant seventh (notated as C7): C E G Bb
Minor seventh (notated as Cm7 or C-7): C Eb G Bb
Half diminished seventh (notated typically as C minor flat five): C Eb Gb Bb
Diminished seventh (notated as Cdim7 or Co7): C Eb Gb Bbb (B double flat, en-harmonically equivalent to an A natural)

Also less correct but some people use it sometimes is the minor major seventh, C Eb G B, used for the augmented sound.
I find it very useful to think about the chords in intervals as well
M7 is M3m3M3
m7 is m3M3m3 and so on

augmented generally refers to the fifth not the seventh.. :)

but that is a really cool chord... the Cmin maj7 and if you want to hear what it sounds like -- here it is along with the BbminMaj7... in one of the coolest latin jazz standards there is:   Nica's Dream performed by the great Horace Silver..  the first two chords of the form and theme are the MinMaj7s
