Billy Preston's "Complete Vee-Jay Recordings" is a good start for American black church instrumental playing using keyboards.
In that same area, I learned a lot from the records of Aretha, Ray Charles, Dr. John, Richard Tee — even if they're not doing "gospel" music, necessarily, a lot of the basic elements are still there in voicing chords and everything else.
Personally, I go to mass pretty often on Sundays in the RCC, and the music, when it isn't watered-down George Winston "sing-along" campfire new-agey trash to the traditional "order of mass," which I can't stand, involves an organist playing a hymn with music very often by Mendelssohn or Bach or others.
So, you can go black (and IME there's a lot of ground to cover — the traditional styles like by people above is seen as pretty old-fashioned or corny by some people, whereas for others it's still a legitimate style), or you can go Bach. Or make an arrangement of Beethoven's Missa solemnis for solo piano.
I don't think anyone can say what you mean by "gospel" music without more explanation.
Or, you can Youtube search for "Hammond organ shouting music gospel" and probably get something that you can translate into piano instead of organ.
There is a good Homespun instructional video/DVD by....some lady I can't remember...who breaks down the traditional "American 'churchy'" style a bit. IIRC it comes with some transcriptions in regular notation.
