here's a fried chicken recipie i found on www.recipelink.com

unfried southern fried chicken

soak your chicken in buttermilk (1-2 quarts) as required to cover chicken

(the coating covers one large chicken cut into 8-10 pieces)

coating:
1T salt
1 1/2 cup unbleached flour (or special k cereal - much better - ground in cuisinart)
1/4 c stone ground corn meal
1/2 tsp garlic powder
3/8 tsp black pepper
1/4 tsp celery powder
1/4 tsp sage
1/2 tsp Old Bay seasoning (really good stuff)
scant pinch curry powder
scant pinch ground hot red pepper

in a large bowl, cover the chicken with buttermilk and salt.  refrigerate overnight (or for an hour) drain.  preheat oven to 400 F.  line a large cookie sheet with a wire rack (i just put it in a pan) mix all coating ingredients in a large bag.  shake each chicken piece one at a time to coat.  lay on rack.  (can double coat)  bake until chicken is well-browned, about 45 minutes.

do you know why benches fall apart?  it is because they have lids with little tiny hinges so you can store music inside them.  hint:  buy a bench that does not hinge.  buy it for sturdiness.

ps   if you have any recipies you'd like to share, please do.  comfort food is good sometimes!

talking about  real comfort food------>chicken ginger soup

fry 1 1/2 table spoons of chopped gingers till brown in a pan. pour 4 cups of water. wait till the water boils before adding the cut out chicken drumsticks, 4 pieces total ( include the cut bones, too ). add salt. put lid on. turn the fire to shimmer. your wonderful chicken ginger soup would be ready in 20 minutes. serves 3-4 persons.

yup, you gotta cut the chicken bone using butcher knife....oh, btw, watch your piano fingers. best, tds

that sounds good.   btw i don't use all the spices in my recipe.  most just the old bay and some salt.

is backfokievbrahms on a diet?  if not, forgive me.  tofu is very healthy and despite my liking comfort food at times...it's probably healthier to eat lighter.  we used to have a farmer's market nearby in calif. (when we lived there) and i used to shop for the whole week for something like $30. we ate lots of veggies and it was healthier than spending over $100. on chips and snacks.  they are what cost the most.

pocorina....close to the italian cheese pecorino.

fine cheeses to me are the most comforting. as much as wisconsin likes to brag about its cheese, ive never had any from there that matched the great european varieties. I've really been into the soft French cheeses lately--explorateur, saint andre, and a triple cream brie....along with a porter ale chedder...but my all time favourites are the authentic Dutch goudas, especially the 18-month and 5-year aged......some good cheese along with some good ripe fruit and some wonderful bread is unbeatable IMHO......yet I am still a cheese novice

but what is possibly more comforting than a fresh Perigord truffle cut into an omelet :)
