I love the openings of the Star Wars movies (and computer games). They always start with "A long time ago in a galaxy far away..." And then yellow tekst with John Williams music.
And when that it finished you start to see starts, the 'camare' turns a little and you see a ship in space and the movie begins.
It would be that great without John Williams music. But I wouldn't dare to call the music itself 'the greatest'.

2001: A Space Odyssey. "Also Sprach Zarathustra" might be hackneyed and mocked NOW, but remember ya heard it there first! If I'm in the proper mood for watching such an epic and overwhelming movie, the opening music is enough to send shivers down my spine (plus the Ligeti/Strauss later on is stunning).
Also, I enjoy the music for A Clockwork Orange and Scarface. And, yes, Pulp Fiction and The Godfather also have wicked music. And how about Requiem for a Dream?

Many Korngold scores. Robin Hood and The Sea Hawk come to mind. Great music!
In Robin Hood, after the introduction title credits the music continues while we come directly on to the first scene where the featured drummers play exactly what the score drums are playing at that very moment, concluding the fanfare, all synchronized and everything. An exciting little detail. Now, that's what happens when you let the composer meddle with the final cutting of the film!
The Harry Potter, Lord of the Rings (especially the third film) and Star Wars have all great introductory music...

I'd have to say bernard herrman. Pyscho, Vertigo, and North by Northwest have some of the coolest opening music. Pyscho - violent, bitonal strings, Vertigo- Tristanesque, and NbyNW - very heroic sounding.

I think he was brilliant during the time of the old Star Wars and Indiana Jones, but then he just... *sob* I so hate him nowadays. The only exception is Catch Me If You Can.
