Why is 'history' called 'history' and not 'herstory'?

Etymology
from Old French historie, from Latin historia, from Ancient Greek ιστορία (istoria) "learning through research, narration of what is learned", from ιστορέω (istoreo) "to learn through research, to inquire", from ίστωρ (istor) "the one who knows, the expert, the judge".

It's interesting, that there is only one word for "story" and "history" in German language: "Geschichte"

So, "seine Geschichte" could mean either "the history of his life" (english "his history") or "the story, he is telling" (english "his story").
If it doesn't work - try something different!

I don't know where you getting at but shouldn't it be either hisstory or herstory? Or maybe theirstory?

The word history has nothing to do with his or her. On the other hand, the names of many professions have the word 'man' in them, even if a woman has the job.
