I’ve long wanted a collection of “best” editions, and can finally start one. I’d appreciate suggestions for Chopin’s etudes (no Cortot, please) and Beethoven’s Sonatas. Thanks!

How do you define the "best" edition? I am very happy with my hardcover Henle editions of the Beethoven sonatas and Chopin Etudes. At the same time, I don't particularly like their fingerings, at least not for Chopin. But I love how the music looks, and it's an Urtext. So are those the best by that metric?

I’m open as to metric, hence the use of scare quotes. Well-respected would be one metric, as would sensible fingering. I’d be happy with an ürtext plus a student edition.
